I use pork trim instead of plain pork sausage and I also put it into some of my wifes Pyrex glass pans. I then spray the pan with cooking spray and then I lay a piece of wax paper in the pan and then put in the meat. This helps with the meat coming out onto your smoker racks the next day! And then I smoke it with some apple wood... good stuff! You got to try some! Blzafour
