We love to eat squirrel when I take the time to get them. My family laughs at me but I run the little bugger through the meat grinder and add some of your favorite chicken seasonings and fry the patties up in a skillet. Make a great semi white meat looking burger.
Just reporting back…I didn’t try any of the above suggestions yet but did make up some little squirrel smokies and they were awesome…a little dry but tastey. I had been overseas for a few days and just made up a small batch for the flight. YUM
