I cut up my own deer and make eveything boneless and in roasts. Just an idea, you can always cut a roast into a steak or stew meat. My wife and I both work so the crock pot is our best friend. We put a 2-4lb. roast in it with two or three cans of musharoom soup and cook it on low until we get home. Usually 8 hrs. or so. The soup makes a great gravy and the roast is not dried out. You can cut the meat with a fork and it makes for a simple easy meal.
