Just about all water fowl will work.
Skin and bone duck, slice into 1/2″x2″L strip’s and set aside. In a large fry pan and a little olive oil, one chopped onion, one bulb chpped garlic add a little dried red pepper, fresh ground pepper and a touch of spike. Get all that frying really hot and stir well, when the onion is transparent add the duck and sir hot till done, keep stiring this dish. When done you can pour over pasta, rice or just eat it as is. This duck will melt in your mouth![=P~]
